Ingredients
- 1/2 cup creamy peanut butter.
- 4 tablespoons unsalted butter, room temperature.
- 1 cup of packed light brown sugar.
- 2 large eggs.
- 1 teaspoon vanilla extract.
- 1 1/2 cups of all purpose flour.
- 1 teaspoon baking powder.
- 1/4 teaspoon salt.
- 1/3 cup granulated sugar, for rolling.
- chocolate kisses, unwrapped.
Method
- Preheat over to 350F. In a mixing bowl, mix together flour, baking powder, and salt. When done, set aside.
- Mix together peanut butter and butter until smooth with an electric mixer. Add to the mixture, sugar, eggs and the vanilla extract. Slowly add in the other dry ingredients.
- Place granulated sugar on a plate. Roll a full tablespoon of dough into a ball, then roll into the sugar. Place on cookie sheets, approximately 2 inches apart.
- Bake until the cookies start to puff up, for approximately 10 minutes. Remove from the oven, gently press in the chocolate kiss into the center of each cookie. Then return to the oven and bake for another 2-3 minutes, until the cookies look golden and the chocolate is soft.
- Leave to cool on the cookie sheet for approximately 10 minutes before placing on to a wire cooling rack.
